Do you have to divide in half and knot each side to the middle.. or can I just do all of them without dividong

There are two methods of knotting normal patterns: row by row and segment knotting.

Row by row is when you take all the knots of one horizontal row and make them. Then you take the next row and make all those knots and so on.

Segment knotting seems to be what you are describing. There you knot in diagonals as often as possible instead of going strictly row by row.

For patterns that are based on the chevron (pattern #2) it makes sense to knot them in a v shape like you describe.
